5 Easy Vegan Brunch Ideas

SHARE THIS WITH FRIENDS:

Almost all 79 million vegans can agree that brunch is the most enjoyable meal of the day. After all, you can’t go wrong with breakfast—especially if it’s plant-based.

But if you’re not sure where to start with your vegan brunch recipes, this round-up is just what you need! Each dish is incredibly easy to make and requires minimal prep work (or no prep work at all). So here are five amazing vegan brunch ideas that will help satisfy even the most ravenous of appetites.

1. Vegan Breakfast Burritos

A breakfast burrito is a delicious way to kick off your vegan brunch. It’s basically a tortilla filled with your favorite breakfast goodies (think tofu scramble, hash browns, and veggies).

To make sure you don’t go overboard on calories, use whole wheat flour tortillas. If you have time to make them from scratch, that would be ideal; however, store-bought tortillas are still great!

When you're in such a rush that you can't find time to put together a burrito, here are some mouthwatering Alpha burritos that you can grab and go:

2. Tofu Scramble

Tofu scramble is a plant-based staple; to exclude it from this list of great vegan breakfast ideas would be a crime.

The secret to making a good tofu scramble is in how you prepare the tofu. You can buy it in vacuum-sealed packages, but you’ll want to take it out and press it for about 30 minutes before cooking. This should give you firm tofu that’s ready for scrambling.

The only other ingredients you really need are onions, peppers or mushrooms, and spices. But don’t be afraid to get creative here! Try adding potatoes or bean sprouts as well—it makes the whole dish more filling.

3. Alpha Waffle Sandwiches

Waffle sandwiches are the ultimate classic brunch favorite. There are many ways to make this, but here’s an easy way to get the best flavor.

You only need two waffles, buttery spread, and sliced cheese for this recipe. Just spread the butter on both sides of each waffle, then add a juicy vegan patty. Finish with the cheese and any other toppings you want before going in for the ultimate bite.

But if you don’t have any vegan patties on hand, or you want to provide something more interesting than a plain old burger, try an Alpha breakfast sandwich to spice things up. Here are the flavors:

You can add them between your waffles for a stacked breakfast sandwich that will rival any fast food joint. Or, eat them by themselves for a satisfying treat.

4. Chickpea Flour Pancakes

Chickpea flour pancakes are a great substitute for regular pancake batter. They’re simple to make, fluffy, and super filling.

The recipe requires four ingredients: chickpea flour, baking powder, salt, and sugar. All you need to do is to combine all the ingredients into a bowl and stir until they’re well-mixed. Then pour the mixture onto a hot pan greased with oil and cook for about 5 minutes on each side.

Top with fresh berries, maple syrup, and whipped cream for a real treat.

5. Coconut Yogurt Fruit Parfait

A parfait is a layered dessert that can be made with just about any combination of ingredients. The best part? No baking necessary.

For this simple dish, combine a layer of coconut yogurt with defrosted strawberries, then add fresh blueberries. Next, fill your glass with alternating layers of yogurt and fruit. Top each parfait with a sprinkling of granola and enjoy!
