Vegan Simple Soulful Plate with BBQ Chik'n

INGREDIENTS

Alpha BBQ Chik’n


  • 1 bag of Alpha Foods Grilled Chik’n Strips
  • 1/2 cup BBQ sauce
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • Oil for sautéing


Soulful Greens


  • 1 lb of kale (about 5 big leaves)
  • 1 lb of collard greens (about 5 big leaves)
  • ½ onion (any kind), diced
  • 5 garlic cloves
  • 2 tsp smoked paprika
  • 2 cups of veggie stock or broth
  • ½ jalapeno, thinly sliced (optional)
  • 2 pieces of vegan bacon OR 1 tsp liquid smoke or smoked salt
  • Salt & black pepper to taste

DIRECTIONS

  1. Start with the Soulful Greens, prepare the greens by washing and massaging them with your hands.
  2. Cut greens into bite-sizes pieces (folding/rolling them helps!) keep the stems for more of a “bite” and to get more nutrients or leave them out.
  3. If you’re using vegan bacon, dice and heat in a large pot (stock pan) for 1-2 minutes.
  4. Add onions, garlic, jalapenos and smoked paprika to the pan and enough veggie broth/stock to let them cook. Sauté for about 3 minutes or until the onion has begun to become transparent.
  5. Add the chopped greens and veggie stock to the pot and stir.
  6. Let simmer for about 30-40 min, tasting and adding salt & black pepper as needed.
  7. Cook the Alpha Grilled Chik’n Strips according to package cooking instructions.
  8. While sautéing, add in garlic powder and smoked paprika.
  9. Once finished cooking, toss in BBQ sauce in the pan.
  10. Plate the BBQ Chik’n and Soulful Greens with your favorite mac and cheese to make a Simple Soulful Plate.

Prep: 15 minutes | Serves 4 INGREDIENTS Chik'n Filling 1 package (about 12 oz) Alpha Foods Homestyle Chik'n Strips 2 tablespoons olive oil 1 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon smoked paprika Salt and pepper to taste Juice of 1 lime Other 8 small corn tortillas 1 cup vegan cheese (your choice, but cheddar-style works well) 1 cup pico de gallo (store-bought or homemade) 1/2 cup vegan sour cream 1/4 cup chopped fresh cilantro 2-3 jalapenos, thinly sliced (adjust to your spice preference) DIRECTIONS Cook the Chik'n: In a skillet, heat 2 tablespoons of olive oil. Add the Alpha Foods Homestyle Chik'n Strips and season them with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of smoked paprika, and a pinch of salt and pepper. Cook for 5-7 minutes until the chik'n strips turn golden brown, and then squeeze the juice of 1 lime over them. Warm the Tortillas: Briefly heat the small corn tortillas either in the microwave or on a skillet until they are warm and pliable. Assemble the Tacos: Place a portion of the cooked chik'n strips on each tortilla, followed by a sprinkle of vegan cheese, a spoonful of pico de gallo, and some thinly sliced jalapenos. Add Toppings: Drizzle vegan sour cream over the top and sprinkle chopped fresh cilantro for extra flavor.  This chicken-free meal doesn’t cluck around. Enjoy!
