Vegan Chik'n Pasta Salad

INGREDIENTS
- 2 packages Alpha Foods Chik’n Strips
- 2 cups of pasta
- 1 cup green beans, canned
- 1 cup corn, canned
- ¾ cup peas and carrot mix
- ¾ cup broccoli, fresh or frozen
- ¾ cup okra, fresh or frozen
- ½ cup chickpeas
- ½ cup sliced olives
- ½ cup tomatoes, sliced
- ¼ cup vegan mayo
- 3 tbsp capers
- 1 tbsp lemon juice
- ½ tbsp chives
- ½ tbsp dill
DIRECTIONS
- Cook both Alpha Chik’n Strips and pasta (2 cups uncooked) according to package instructions, then set aside to cool.
- Add all ingredients to a large bowl & mix well.
No clucks in this chicken-free dish—enjoy!
